Grilled corn on the cob with lime butter

Ingredients:
- 4 ears of corn (pre-cooked or raw)
- 50 g butter
- Juice and zest of 1 lime
- Pinch of salt
- Optional: chili flakes or grated Parmesan
You’ll need:
- Open grill or BBQ
- Charcoal or briquettes
- Optional: smoking wood (beech or apple)

Here’s how to make it:

Mix the softened butter with lime juice and zest. Add salt and chili flakes to taste. - Grilling
Place the corn cobs directly on the grill rack. Grill for about 10 minutes, turning regularly until nicely charred. - Finishing
Brush the cobs with the lime butter. Let it sit for a moment. - Serving
Cut in half or serve whole (best served warm).
Tip:
Wrap in aluminum foil for softer kernels, or place directly over the flame for extra crunch.

Corn is naturally sweet. By adding a handful of wood chips to your coals or briquettes, you create an incredible flavor contrast with the fresh lime butter. For this recipe, we recommend 2 flavors:
- Apple: our absolute favorite for vegetables! The subtly sweet and fruity smoke of applewood perfectly enhances the natural sweetness of the corn cob.
- Beech: want to keep it a bit more neutral? Beechwood releases a mild, slightly sweet smoky flavor that beautifully balances the lime and butter flavors.
Pitmaster Tip: because the corn only grills for 10 minutes, you want your smoking wood to start smoking immediately and not just burn up. Soak a handful of chips in water for 15 minutes, squeeze them out, and throw them directly onto the coals before placing the corn on the grate.
