Chicken thigh fillet with honey-mustard marinade

Ingredients (4 servings):
- 600 g chicken thigh fillets
- 2 tbsp honey
- 2 tbsp coarse-grained mustard
- 1 tbsp olive oil
- 1 tsp lemon juice
- Salt and pepper
You’ll need:
- Open grill or griddle
- Charcoal or coconut briquettes

Here’s how to make it:
- Marinating
Mix all the ingredients. Marinate the chicken for at least 30 minutes (preferably 2 hours). - Grilling
Grill over medium-high heat for about 4–5 minutes per side until nicely caramelized and cooked through. - Serving
Slice and serve on a wooden board with a fresh salad. - Variation?
Add a spoonful of yogurt to the marinade for extra tenderness.
Tip:
Let the chicken rest for 5 minutes after grilling for maximum juiciness.
