Chicken thigh fillet with honey-mustard marinade

Ingredients (4 servings):

  • 600 g chicken thigh fillets
  • 2 tbsp honey
  • 2 tbsp coarse-grained mustard
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • Salt and pepper

You’ll need:

  • Open grill or griddle
  • Charcoal or coconut briquettes

Here’s how to make it:

Marinating
Mix all the ingredients. Marinate the chicken for at least 30 minutes (preferably 2 hours).
Grilling
Grill over medium-high heat for about 4–5 minutes per side until nicely caramelized and cooked through.
Serving
Slice and serve on a wooden board with a fresh salad.
Variation?
Add a spoonful of yogurt to the marinade for extra tenderness.
