Prawns Plancha-Style

Crispy fried on the plancha with garlic, lemon and heat
For whom?
For outdoor cooks who love simplicity, atmosphere and flavour. A dish that impresses without complicated fuss.
Ingredients (for 4 people):
- 500 g large raw prawns (peeled, with tail)
- 2 cloves of garlic, finely chopped
- 1 red chilli pepper, in thin rings
- Juice of half a lemon
- 3 tbsp olive oil
- Fresh parsley, roughly chopped
- Salt and pepper to taste
What you need:
- Fire bowl with cooking ring (plancha)
- Coconut briquettes for a long-lasting, even base glow
- Wood for the fire in the cone (optional for atmosphere and warmth)

How to make it:
- Fire preparation
Light the coconut briquettes in the cone of the plancha. Optionally add some wood for extra atmosphere. Let the cooking ring heat up properly – on the hot centre you cook quickly and powerfully, on the outside you keep warm. - Marinating
Mix the prawns with garlic, chilli, lemon juice, olive oil and some salt and pepper. Leave to marinate for approx. 10 minutes. - Cooking on the ring
Pour a little oil on the plancha and place the prawns on the hot part of the ring. Cook them in 1-2 minutes per side until nicely pink and lightly crispy. Then slide them to the cooler zone to keep warm or cook gently. - Serving
Sprinkle with parsley and serve immediately. Delicious with baguette, aioli or grilled lemon halves (also from the ring!).
