Vegetable skewer with halloumi

Ingredients:

  • 1 red bell pepper
  • 1 zucchini
  • 1 red onion
  • 200 g halloumi

You’ll need:

  • Open grill or OFYR
  • European blend charcoal
  • Metal or wooden skewers (soak beforehand)

Here’s how to make it:

Prep
Cut the vegetables and halloumi into large chunks. Marinate briefly in oil, lemon juice, salt, and pepper.
Assembling the skewers
Alternately thread the vegetables and halloumi onto the skewers.
Grilling
Grill directly over the fire until they have nice grill marks, about 2–3 minutes per side.
Serving
Sprinkle with oregano and serve warm. Delicious with yogurt dip or flatbread.

Tip:

Use a lemon wedge as a tong; tasty and handy!
