Spicy Chicken Quesadillas

Crispy on the outside, creamy on the inside – perfect for sharing.

Who is it for?

Serves 4 as a main course or 8 as an appetizer.

Ingredients (4 servings):

  • 2 chicken breasts, cooked and shredded
  • 4 wraps or tortillas
  • 100 g shredded cheese
  • 1 red onion, finely chopped
  • 1 tsp smoked paprika
  • 1 tbsp BBQ sauce
  • Fresh cilantro or parsley

You’ll need:

  • Plancha, OFYR, or grill plate
  • Briquettes or wood for consistent heat

Here’s how to make it:

Make the filling
Mix the chicken with BBQ sauce, onion, paprika, and cheese.
Fill & grill
Divide the filling between 2 tortillas, then place a second tortilla on top. Grill for 2–3 minutes per side until golden brown.
Cutting
Let cool slightly and cut into wedges.
Serving
Garnish with fresh herbs. Delicious with salsa or guacamole.

Tip:

Use a cast-iron skillet as a “press” for an extra crispy exterior.
