Mussels cooked on the griddle with white wine & garlic

The sea in a pan—steaming, salty, and filled with fragrant steam.
Who is this for?
Serves 2–4 as a main course, or 6 as an appetizer.
Ingredients (4 servings):
- 1 kg mussels
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 150 ml dry white wine
- 1 shallot, chopped
- Fresh parsley
- Lemon wedges
You’ll need:
- Plancha or OFYR ring
- Coconut briquettes or wood for even heat

Here’s how to make it:
Preparation
Rinse the mussels thoroughly. Discard any that are open and won’t close.
Cooking
Heat oil on the griddle. Sauté the onion and garlic briefly, add the mussels, and deglaze with wine.
Covering
Cover with a metal lid or bowl. Steam for 5–7 minutes until all the shells have opened.
Serving
Sprinkle with parsley, and serve with lemon and French bread.
Tip:
Use a roasting pan or cast-iron skillet if you don’t have a lid.
